In honor of the spring solstice, some author friends and I have put together a blog hop focused on recipes, gardening tips, and/or favorite spring rituals. I hope you'll stop visit the other awesome author/bloggers listed below.
In the meantime, here's my offering, a tasty (and oddly healthy) spring quinoa salad. I break this bad boy out whenever the weather starts to warm up.
You'll need:
2 T butter
1/2 large yellow onion, finely chopped
½ large fennel root, finely chopped (optional)
2 C seedless red grapes, washed and cut in half
2 C white beans, cooked
1 C uncooked quinoa or grain, such as buglar
3/4 C chopped walnuts
1/4 C honey
1/4 C water
fresh baby spinach
crumbled blue or gorgonzola cheese
Over low heat, melt the butter and cook the onion and fennel for about 30 minutes. Remove from heat. Boil the water and cook quinoa according to instructions on the package. Remove from heat. Stir onion and fennel into the cooked quinoa and add salt to taste.
Warm the water in the microwave (I give it 30 seconds) and whisk the honey into it. Stir into the quinoa mixture. Let everything cool a bit. Add the grapes, white beans, and chopped walnuts. Chill in the fridge.
When you're ready to serve, add the baby spinach and crumbled cheese.
